Dave,
Your procedure is how I often machine screws but I use nuts that have been cut half way through. As the chuck clamps the nuts, they in turn clamp the screw. It works well but is a slow process.

Rick the only way I can think to make it better is to use a lathe. If you run one nut to stop tight against the head of the bolt or screw, put another nut on far enough to put in a 3 jaw chuck, leaving enough out so you can file, turn or grind the end.
