That is a nice tool for sharpeing blades used in a planer, etc, Smaller ones were (are) used to dress wood chisels. I see why you want to use it to work the gibs. (assuming that is what you are doing)
One problem we see with gibs is that they are not flat or straight. Clamping them won't straighten them but it will allow dressing the edge.
I could see using this to make a straight edge to blue the inside of a dovetail.

I'm looking at Veritas tool, will be using this concept to level my
dovetail plates as it can be taken apart for lapping. I have a similar
blade sharpener by 'General' will make a jig like this to hold the
dovetail plate flat over an abrasive paper to level it.
